Finger Licking Good
For the past 15 years, I have been extremely passionate when it comes to the cooking. I believe cooking is a very simple yet delicate art that teaches humans to be patient, elegant, and most importantly, how to feed themselves. Throughout the years, I have learned a variety of different recipes through trial and error; some better than others, but there has been no simpler recipe that I have learned that is as healthy or as simple as my chicken breast strip stir fry.
The ingredients are simple:
- 1 serving of fully cooked chicken breast strips.
- 1 tablespoon of canola oil
- ¼ large white or yellow onion, sliced.
- ½ red pepper, sliced.
- ½ green pepper, sliced
- 3 tablespoons of Italian dressing per serving.
The steps are very easy. Preheat a medium sauté pan over medium heat. Add the oil, peppers, onions and sauté for five minutes, or until fork tender. Using tongs, add the serving of chicken, I usually determine a handful as a serving, add the Italian dressing, preferably low-fat, mix all the ingredients, cover and let it cook for another 5 minutes. Serve.
Once finished, you have yourself a simple, yet delicious meal that has endless possibilities. In the mood for tacos, warm up some corn tortillas, mash up some avocado, throw in the chicken, and you have some great chicken fajita tacos that are out of this world. Not in the mood for tacos, and carving some pasta, throw the chicken over a bed of pasta and voila! Looking for something a little healthier, serve the chicken with some steamed vegetables and you've got yourself a delicious and healthy meal.
With one simple recipe, I can create three meals, which are quick, simple and affordable. As a college student, I am constantly on the look out for meals that are easy to make and are healthy. I usually make this recipe two to three times a week and I haven't got tired of this meal. So if you're running short on time and need a quick and healthy meal, then whip this up. I guarantee you won't be disappointed!
